You Need:
Instructions: Preheat oven to 350°. Lightly grease and flour mini muffin tins. Peel and core apples. Dice into 1/4" pieces. Fill tins 2/3 full with apple pieces. Lightly beat eggs with a fork. Mix in flour and sugar until well blended. Spread a spoonful of batter over the apple pieces in each cup. Bake 8-10 minutes or until lightly brown and toothpick inserted in center comes out clean. Loosen edges with a knife. Lift out mini cakes and turn over on serving plate.
